Orange madeleines – DePostres

  •  350 g  plain flour
  • 220 g  brown sugar
  • 1 tablespoon baking powder
  • 250 ml vegetable oil
  • 250 ml of cream
  • 4 eggs
  • grated orange peel
  • orange juice (1 orange)
  • lots of love


We separate the yolks from the whites (you can have a look at wikiHow if you don’t know how to do it). In a bowl we beat the yolks with the brown sugar until well dissolved. Add the oil, the orange juice, the grated orange peel (a lot) and the cream. Back to beat.

Mix the flour with the baking powder and add them into the dough. Mix slowly until you get homogeneous dough. Whip the egg whites until it peaks and fold into the mixture. Keep the dough into the fridge during 2 hours minimum (really important to do this step).

Preheat the oven at 200ºC.

Pour the dough inside the madeleines/cupcakes molds and place in the oven’s rack for 15 to 20 minutes.

Divide the dough in your molds and decorate with chocolate, orange marmalade or sugar.

When the cupcakes are done, wait until it cools down and… ready to enjoy!
