- 200 grammes of all-purpose flour
- 2 tablespoons of sugar or brown sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of coarse salt
- 260 ml of milk
- 4 tablespoons of melted butter
- 2 eggs
- 1 pear
- 1 banana
- 1 peach
In a bowl, whisk together flour, sugar, baking powder, and salt; set aside. Whisk milk, eggs and the melted butter until combined. Add the first mix of dry ingredients to the milk mixture; whisk until just moistened. Peel the fruits and then slice them.
SO LET’S COOK!
Heat a large skillet (or use griddle) over medium heat. Lightly brush skillet with melted butter. Use a 1/4-cup measuring cup to spoon batter onto skillet. Gently spread the batter into a 4-inch circle. Add three slices of fruit on it.
When edges look dry and bubbles start to appear and pop on the top surfaces of the pancake, turn over. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep warm in the oven. Continue with more oil and remaining batter.
You’ll have around 15 pancakes. Serve warm, with honey, chocolate, jam, … or whatever you want 😛
NOTE: you can add the toppings that you want and use different fruits.
